How does the conversion work?
Each page is rendered to a canvas, every pixel is converted with the standard luminosity formula (0.299R + 0.587G + 0.114B), and the pages are rebuilt into a new PDF. That is why it is true grayscale, not just a desaturated preview.
Will the text still be selectable?
No. Pages are re-rendered as images, so text is baked into the page graphics and cannot be selected or copied in the output. The file may also grow larger than the original.
Which quality should I pick?
Standard keeps files small, Balanced is right for most documents, and High renders at double resolution for crisper print output. Large documents take longer at High.
